Common throughout much of Latin America in varying forms, this fried bread became a staple in Southwest US restaurants, often served as a light dessert or paired with main dishes, and is similar to Native frybread but thinner and usually triangles or rectangles. Our fragrance interpretation is of the kind commonly offered in New Mexico restaurants: Simple wheat dough leavened without yeast, fried until golden, served warm and drizzled with just a bit of honey (our own vegan accord). The frying oil note may be strong to some people.
